The best quote about Apple Notes I heard was on Hacker News by tptacek. One paragraph reads as follows (emphasis is mine):
For several years I just use Apple's Notes.app. It's honestly pretty great; it's frustratingly good, in fact, because it doesn't feel much better to use than does TextEdit. Both search and sync work fine. I don't have to think about what I'm writing or how it fits into the scheme of things because I'm guaranteed to be able to find things with search. I can drag screenshots of lecture videos in and write short sentences about them.
More recently, Apple Notes added wiki-like hyperlinks, where you can make links between different notes. See link to another note for more information.
In addition to the checklist feature, wouldn't it be a good idea to include a minimal widget to show progression over a set of states? One of the canonical examples is a sales funnel, where you can select the state you are in with a specific contact. For example, mark it as a prospect, a lead, etc. This could be displayed as a combo box, but I think it is prettier to display a set of states that could be checkmarked, without hiding the other states, to see the complete picture.

It is not a full Kanban but helps! Obviously, this suggestion could be applied as other notes taking software as well.
Something like this:
